Voima-Papu Traditional Finnish 'Mardi Gras' Buns

Ingredients

  • 5 dl milk
  • 1 packet of fresh yeast
  • 4 dl Voima-Papu broad bean flour
  • 5 dl potato flour
  • 4 dl wheat flour
  • 2.5 tsp baking powder
  • 1.5 tbsp Psylium
  • 1 dl sugar
  • 1 dl syrup
  • 1 tsp fine sea salt
  • 200 g fat (butter or plant-based spread)

Method

  1. Pre-heat the oven to 180 degrees.
  2. Heat the milk in a saucepan.
  3. Soak the yeast, salt and sugar and syrup. 
  4. Add 1dl of wheat flour, psyllium and half of the fat (100g).
  5. Mix 4dl bean flour with the baking powder. Add them to the pan while stirring. 
  6. Add the potato flour and wheat flour, alternately.
    • (If the mixture is still loose, you can add potato flour.) 
  7. If the dough sticks to your hands put a little oil in your hands and roll the buns on the ball. However, the dough should stay round and not sink, 
  8. Leave doughballs to raise for 30 minutes. 
  9. Melt the other half of the fat (100g) and brush the top of the buns with the melted fat
  10. Put in the oven for approx 15 minutes until the buns turn a beautiful, golden colour.
